  Refried Beans

 

 

2 cups pinto beans (rinsed)
8-12 cups water

salt

2-4 garlic gloves (garlic paste or powder can be used but fresh garlic is best)
1/2 medium white onion
1 medium or 2 small serrano chiles

 

In pot bring 8-12 cups of water to a boil. Add salt and 2-4 cloves of garlic. Add 2 cups rinsed pinto beans (you don't need to soak the beans.)

When it comes to a boil reduce heat to low, cover and cook 2-3 hours until beans are soft.


Towards end of cooking time on beans finely mince 1/2 a medium white onion. Remove seeds from 1 medium or 2 small serrano chile and finely mince. In a pan add 1tbl oil and cook the onion and serranos on low heat until soft and translucent. Avoid adding too much color or burning. Add the cooked beans, including the liquid(add as much or as little to get final thickness of refried beans desired) and mash with potato masher.
